On December 13, 2024, a unique event will be held in Tel Aviv: a lecture on Ukrainian cooking and a master class on making kulesh.

“On December 13, we will have a unique opportunity to take a culinary journey into the era of the Hetmanate together with the author of the best-selling book of the same name (note, the scientific work became a bestseller!) Alexey Sokirko, candidate of historical sciences, associate professor at Taras Shevchenko University of Kyiv.

We will learn about the elite old Ukrainian cuisine (not only Cossack and peasant), about its influence on the modern diet of Ukrainians and other peoples, including Jews. Let’s get acquainted with ancient Ukrainian recipes and even try something,” write the organizers.

“Let us remember that cuisine is not just food, it is a socio-economic cross-section and a cultural mirror, it is identity and history.”


History of the dish: culinary heritage of Ukraine

Kulish is a traditional dish of Ukrainian cuisine, which was once prepared by the Cossacks during their campaigns. The main ingredients – millet, water, lard, onion and garlic – made this dish satisfying and easy to prepare on the go. Later, kulesh became part of home cooking, and its recipes varied depending on the region. For example, in some areas potatoes, meat or even fish were added.
